Masala Oats Ingredients: 1 cup quick-cooking oats 2 cups water 1 tbsp oil 1/2 tsp mustard seeds 1/2 tsp cumin seeds Pinch of asafoetida (hing) 5-6 curry leaves 1 small onion, finely chopped 1/2 cup mixed vegetables (carrots, peas, bell peppers, finely chopped) 1/4 tsp turmeric powder 1/2 tsp red chili powder (adjust to taste) 1/2 tsp garam masala Salt to taste Fresh coriander, chopped for garnish Lemon juice (optional) Instructions: Heat oil in a pan. Add mustard seeds, cumin seeds, hing, and curry leaves. Let them splutter. Add chopped onion and sauté until translucent. Add the mixed vegetables and cook for 3-5 minutes until slightly tender. Stir in turmeric powder, red chili powder, garam masala, and salt. Cook for 1 minute. Add oats and mix well. Roast for 1-2 minutes. Pour in water and bring to a boil.
